Giselle's Burnt Basque Cheesecake Recipe
This super simple recipe is a winner at any time of year in the restaurant. It pairs beautifully with a fruit compote or fresh fruit - or with caramel sauce. Don't panic if you think the top of your cheesecake looks like it is burning - just remember the name of this cheesecake and trust in the process! And most importantly. have a happy Easter and enjoy your cooking!
800g cream cheese (at room termperature)
225g caster sugar
200g Greek yoghurt
2 tablespoons plain flour
4 eggs
1 tablespoon good quality vanilla essence
- Preheat your oven to 220 degrees.
- Put all the ingredients in a large mixing bowl and whisk them all together. You can use a food mixer, a stick blender or an electric hand whisk for this. Beat all the ingredients together until there there are no lumps.
- Take a 24cm cake tin with a removable base. Line the tin with non-stick greaseproof paper. This doesn't have to be smooth around the sides. In fact, a few crinkles in the paper adds a lovely rustic touch to the final cheesecake.
- Pour mixture into the tin and bake for 20 minutes. Don't panic if the top goes a very dark brown colour on top.
- After 20 minutes, remove from the oven, leave in tin for at least one hour to cool and set. Remove from tin and remove paper. Cut and serve with stewed fruit or compote, or a caramel sauce.
