We are excited to announce the launch of a Level 2 Professional Chef Apprenticeship at Strawberry Tree, in conjunction with Exeter College.
Some of you will know that we were lucky enough to take on a brilliant apprentice chef – Ben – two years ago, who is now about to graduate. Ben’s apprenticeship, in his own words, has been “a life-changing experience”. Although Ben will continue to work with us, we would like to offer another young person the same opportunities as him.
If you know a young person (aged 16-25) who is thinking about their next step in life and who might be interested in working in food and hospitality, then please pass on our details. We've visited some great new places and enjoyed every second. We've met producers and vendors, explored menus and bars, and encountered plenty of new dishes and lovely people. The openness, generosity and geniality of the Spanish never ceases to surprise and inspire us.

Sitting at the bar is THE place to be - if you can get it. We were recommended by friends to get to Tabanco Las Banderillas no later than 1pm for any chance of a seat. At 12:59 we got the last 2 spots. Five minutes later there was a queue at the door and no standing room.
Sitting at the bar puts you at the centre of the universe. Plates whizzing past allow you to see what looks good - everything! ¿Perdón - qué come este señor? Cold dishes line the counter. Chat to the bar staff. It's part chaos, part choreography. Shouting and banter between the open kitchen and the front of house. Local prawns, mantis shrimp, queen scallops, chicharrones, dressed potatoes...
What a gem of a bar and some of the best tapas of the trip. ¡Olé!
The covered food market in Jerez is really pretty and was still decked out in some of its end of year splendor.
Best of all was seeing local foraged produce like wild asparagus. This grows on field edges after winter rains and are often used in tortilla. They are intensely flavoured and slightly bitter. Or tagarninas - wild edible thistle stems that are put into hearty winter stews in Andalusia. And radishes the size of carrots - just had to take a photo of them.

The home of sherry - Jerez de la Frontera.
"De la Frontera" means that the city was a strategic frontier town during the Catholic reconquista of Spain and marked the front line between Christian and Muslim territories.

You'll normally find us in the covered markets in Spain. They are great for discovering local ingredients and what's in season and stall holders will happily pass on recipe suggestions. The bars are great too -down to earth with home cooking- and will often prepare fish or produce from the neighbouring stalls. In the Triana market one bar was busier than all the others - a sure sign of its reputation. Fried fish and a mixed salad, glass of fino. Bullseye 🎯
I love this menu board in Córdoba. It shows the daily stew served on each weekday. But best of all it says, 'Somos muy de cuchara', which literally means 'We are very spoony'. There isn't a direct translation but we might say something like 'We are stew people' or 'We love our stews' even though it doesn't mention stews at all!
You know you're in Seville when...
Apparently there are nearly 50,000 bitter orange trees in the city and we've arrived just before harvest. Eat one and you'll quickly regret it - they're as sharp as lemons 😳
But the city council doesn't let them go to waste. It harvests them for the British breakfast table in the form of marmalade, as well as for generating electricity from biogas and for animal feed among other uses...
We've left Córdoba and are en route to Seville. Stopped for breakfast at a roadside 'venta' halfway in La Campana. Breakfast means toasted molleta flatbreads, grated tomato, jamón and big slugs of local olive oil - unfiltered and only just bottled. We never tire of it. It's a magic combo 😋
Sitting at the counter, we eavesdropped on a group sitting next to us chatting with the staff about a lunchtime last week. The staff explained how on 1st Jan they were so busy that even their 3pm reservations didn't get seated until 4.30pm.
That sounds unremarkable until you realise this particular 'venta' is in the middle of nowhere in the midst of miles and miles of olives groves and, if judged on its appearance, was pretty basic. But the story was a nice demonstration of how the Spanish appreciate and value good home cooking and authentic hospitality over their surroundings. Something that lies at the heart of Strawberry Tree 😊
The olive harvest is coming to an end in Andalusia and most producers have got their new 'vintage' already on the shelves.
They say there are 300+ million olive trees in Spain (!!!) When you drive from Málaga to Córdoba, there are olive groves almost non-stop, as far as the eye can see, for nearly the entire journey.
To put that into context, imagine driving from Lyme Regis to Southampton for an hour and half and seeing nothing but apple trees, stretching to the horizon on both sides of the car, for the entire journey. Crazy.
It's hard to convey the extravagance of Reyes and Epiphany in Spain - and the lights and procession in Málaga are hard to beat. We arrived just in time to catch them on the last day in a city heaving with families. Nobody wants to miss the arrival of the Three Kings!
No chance of a table in our favourite tapas bars without a long wait, but we found a good spot in Pez Lola for a bite, including a delicious 'potaje de gambas', before we kick off our road trip tomorrow .
Every year we buy and gather dried lemon verbena from the villages near the top of the Gran Canaria volcanic cone and bring it back to the restaurant to use throughout the year. It has an intense aromatic lemony flavour (funnily enough) and is great for digestion, lowering anxiety, immune support and muscle recovery. So next time you're passing Strawberry Tree, drop in for a cuppa!
Who doesn't like a good market? The Mercado Central in Alicante is the largest covered market in Spain and puts on a spectacular show to rival the Boquería and many more.
We spent the morning admiring its stalls, wowed by their produce and passionate owners, and shopped for our supper. It always makes us wonder why we can't have these places in the UK...
Relleu is a working mountain village in the Marina Baixa mountains of eastern Spain. The village maintains a traditional way of life. Few frills, but an honesty and integrity of its own.
Today we walked the olive groves with Christopher from the Almassera Vella, the village's former olive press, and had lunch in the village square. Found an unexpected sun trap too...
The Relleu valley in the Marina Baixa mountains is home to dozens of small-scale olive growers. At this time of year, they take their crop to the local press to turn their year's work into liquid gold - hopefully enough to see them through the coming year, perhaps with a bottle or two for friends and family.
The process has not changed a huge amount since the Romans were doing it in this exact spot. Crush the olives. Press the paste to release the oil. It was a real privilege to see this process from start to finish.
A huge thank you to Jordi for taking time out of his working day to explain the process and allow us to taste some of the golden elixir flowing from his press.

Out and about exploring Alicante this morning with a walk (for some) and an elevator trip (for others) up to the Moorish Santa Barbara castle with some of the most spectacular views over the province.
Alicante is of course the gateway to the Costa Blanca and cheap package holidays, but it also has a beautiful historic centre, Michelin-starred restaurants, the largest covered food market in Spain, and no shortage of authentic tapas bars. In short, everything the Strawberry Tree team needs 🤩

We're picking kilos of ripe figs every day from the Strawberry Tree garden at the mo. I don't know about your gardens, but it's been a bountiful year and we've used our garden produce on the restaurant menu for the last few months. Giselle (aka "The Fig Whisperer") has some special plans for these beauties on our specials board next week, so come and enjoy them fresh off our tree 😋

Last week some of the Strawberry Tree team went to @thirty-four, the student-run restaurant at Exeter College, where Ben, our apprentice chef, was taking part in the Apprentice-Takeover evening. It was a delicious meal and a really fun evening. So congratulations Ben - and the rest of the apprentices - and thank you for a great evening.
As a little aside... @34 is Exeter's best kept secret. It's open to the public and you get the chance to be fed by the next generation of hospitality stars before they become famous... And at a fraction of the price. Go!

We're in Bilbao in the Pais Vasco, which can only mean one thing... Pintxos!
A classic "Gilda" is a skewer with olives, pickled guindilla chillis and anchovies. This morsel was named after the 1946 Rita Hayworth film of the same name. But this being the Basque Country, they come in a multitude of delicious variations - and we managed to find a bar serving nothing else!
We happened across the old Ortiz anchovy-packing house on the quayside in San Vicente de la Barquera (Cantabria) - hasn't been used for some years - but a brand and business that still means the very best quality - and used by us in the restaurant. An impromptu lunch of razorclams, rabas and salad, followed by a long beach walk - note to self - make sure we return with surfboards in the future - great waves!
Another day, another long lunch... We're in Oviedo, the capital of Asturias (northern Spain), so it has to be 'fabada', followed by sizzling chuletón steak. Much discussion about whether the fabada was as good as Giselle's (we decided it was a close 2nd). Washed down with gallons of still cider. Off trouser shopping tomorrow for a size bigger...
The influences of the Romans and Moors are just as present in the gastronomy of Castile as elsewhere in Spain. How could we pass through Segovia without sitting down to 'Cochinillo' roast suckling pig - with paper-thin crackling, roasted in a wood-fired oven by the 'maestro asadores' at @restauranteelbernadino, followed by Ponche Segoviano, a marzipan-covered cream and sponge confection, as light as can be. It was a relatively short lunch of about 3 hours... 🙄
Exploring the streets of Segovia got us thinking about what is "Spanish"? The doorways we pass seem to hold a bit of the answer - Phoenician, Roman, Jewish, Moorish, Mudejar, Castillian... a rich melting pot that is so much on display in many many parts of Spain. Even English perhaps after we discover Eleanor of England (daughter of Henry II) married Alfonso VIII and became Queen of Castile here in the castle in Segovia. Who knew!?
Day 1 of our New Year's road trip through central and northern Spain kicked off with a breakfast of kings - tortilla sandwich, churros and choc - while visiting some old hang outs in the Guadarrama sierra. Catching up with some old friends before Reyes (epiphany) celebrations tomorrow in Escorial. It's great to be back exploring again ☺️

Today we spent the morning in the cavernous Atarazanas market, sampling some amazing produce, marvelling at the abundant seafood, beautiful wild fungi, and so much more. It has been such a pleasure spending time with the team outside of work. Tomorrow we go our separate ways. Some to Granada, some to the UK, some to Michelin-starred kitchens up the coast... but all taking great memories with us of our time together here.

Chocolate babka and traditional Challah are two of our favourite breads - and the recipes in our Enriched Breads cookery class in our Autumn program of food experiences at Strawberry Tree. In our class, you’ll also learn how to make Spanish “torrijas”, soaked in syrup – believe us, you’ll never look at stale bread the same way again – and take away your own finished breads at the end. We are excited to announce the launch of a Level 2 Professional Chef Apprenticeship at Strawberry Tree, in conjunction with Exeter College.
Some of you will know that we were lucky enough to take on a brilliant apprentice chef – Ben – two years ago, who is now about to graduate. Ben’s apprenticeship, in his own words, has been “a life-changing experience”. Although Ben will continue to work with us, we would like to offer another young person the same opportunities as him.
If you know a young person (aged 16-25) who is thinking about their next step in life and who might be interested in working in food and hospitality, then please pass on our details. Sitting at the bar is THE place to be - if you can get it. We were recommended by friends to get to Tabanco Las Banderillas no later than 1pm for any chance of a seat. At 12:59 we got the last 2 spots. Five minutes later there was a queue at the door and no standing room.
Sitting at the bar puts you at the centre of the universe. Plates whizzing past allow you to see what looks good - everything! ¿Perdón - qué come este señor? Cold dishes line the counter. Chat to the bar staff. It's part chaos, part choreography. Shouting and banter between the open kitchen and the front of house. Local prawns, mantis shrimp, queen scallops, chicharrones, dressed potatoes...
What a gem of a bar and some of the best tapas of the trip. ¡Olé!
The covered food market in Jerez is really pretty and was still decked out in some of its end of year splendor.
Best of all was seeing local foraged produce like wild asparagus. This grows on field edges after winter rains and are often used in tortilla. They are intensely flavoured and slightly bitter. Or tagarninas - wild edible thistle stems that are put into hearty winter stews in Andalusia. And radishes the size of carrots - just had to take a photo of them.

The home of sherry - Jerez de la Frontera.
"De la Frontera" means that the city was a strategic frontier town during the Catholic reconquista of Spain and marked the front line between Christian and Muslim territories.

You'll normally find us in the covered markets in Spain. They are great for discovering local ingredients and what's in season and stall holders will happily pass on recipe suggestions. The bars are great too -down to earth with home cooking- and will often prepare fish or produce from the neighbouring stalls. In the Triana market one bar was busier than all the others - a sure sign of its reputation. Fried fish and a mixed salad, glass of fino. Bullseye 🎯
I love this menu board in Córdoba. It shows the daily stew served on each weekday. But best of all it says, 'Somos muy de cuchara', which literally means 'We are very spoony'. There isn't a direct translation but we might say something like 'We are stew people' or 'We love our stews' even though it doesn't mention stews at all!
You know you're in Seville when...
Apparently there are nearly 50,000 bitter orange trees in the city and we've arrived just before harvest. Eat one and you'll quickly regret it - they're as sharp as lemons 😳
But the city council doesn't let them go to waste. It harvests them for the British breakfast table in the form of marmalade, as well as for generating electricity from biogas and for animal feed among other uses...
We've left Córdoba and are en route to Seville. Stopped for breakfast at a roadside 'venta' halfway in La Campana. Breakfast means toasted molleta flatbreads, grated tomato, jamón and big slugs of local olive oil - unfiltered and only just bottled. We never tire of it. It's a magic combo 😋
Sitting at the counter, we eavesdropped on a group sitting next to us chatting with the staff about a lunchtime last week. The staff explained how on 1st Jan they were so busy that even their 3pm reservations didn't get seated until 4.30pm.
That sounds unremarkable until you realise this particular 'venta' is in the middle of nowhere in the midst of miles and miles of olives groves and, if judged on its appearance, was pretty basic. But the story was a nice demonstration of how the Spanish appreciate and value good home cooking and authentic hospitality over their surroundings. Something that lies at the heart of Strawberry Tree 😊
The olive harvest is coming to an end in Andalusia and most producers have got their new 'vintage' already on the shelves.
They say there are 300+ million olive trees in Spain (!!!) When you drive from Málaga to Córdoba, there are olive groves almost non-stop, as far as the eye can see, for nearly the entire journey.
To put that into context, imagine driving from Lyme Regis to Southampton for an hour and half and seeing nothing but apple trees, stretching to the horizon on both sides of the car, for the entire journey. Crazy.
It's hard to convey the extravagance of Reyes and Epiphany in Spain - and the lights and procession in Málaga are hard to beat. We arrived just in time to catch them on the last day in a city heaving with families. Nobody wants to miss the arrival of the Three Kings!
No chance of a table in our favourite tapas bars without a long wait, but we found a good spot in Pez Lola for a bite, including a delicious 'potaje de gambas', before we kick off our road trip tomorrow .
Every year we buy and gather dried lemon verbena from the villages near the top of the Gran Canaria volcanic cone and bring it back to the restaurant to use throughout the year. It has an intense aromatic lemony flavour (funnily enough) and is great for digestion, lowering anxiety, immune support and muscle recovery. So next time you're passing Strawberry Tree, drop in for a cuppa!
Who doesn't like a good market? The Mercado Central in Alicante is the largest covered market in Spain and puts on a spectacular show to rival the Boquería and many more.
We spent the morning admiring its stalls, wowed by their produce and passionate owners, and shopped for our supper. It always makes us wonder why we can't have these places in the UK...
Relleu is a working mountain village in the Marina Baixa mountains of eastern Spain. The village maintains a traditional way of life. Few frills, but an honesty and integrity of its own.
Today we walked the olive groves with Christopher from the Almassera Vella, the village's former olive press, and had lunch in the village square. Found an unexpected sun trap too...
The Relleu valley in the Marina Baixa mountains is home to dozens of small-scale olive growers. At this time of year, they take their crop to the local press to turn their year's work into liquid gold - hopefully enough to see them through the coming year, perhaps with a bottle or two for friends and family.
The process has not changed a huge amount since the Romans were doing it in this exact spot. Crush the olives. Press the paste to release the oil. It was a real privilege to see this process from start to finish.

Out and about exploring Alicante this morning with a walk (for some) and an elevator trip (for others) up to the Moorish Santa Barbara castle with some of the most spectacular views over the province.
Alicante is of course the gateway to the Costa Blanca and cheap package holidays, but it also has a beautiful historic centre, Michelin-starred restaurants, the largest covered food market in Spain, and no shortage of authentic tapas bars. In short, everything the Strawberry Tree team needs 🤩

We're picking kilos of ripe figs every day from the Strawberry Tree garden at the mo. I don't know about your gardens, but it's been a bountiful year and we've used our garden produce on the restaurant menu for the last few months. Last week some of the Strawberry Tree team went to @thirty-four, the student-run restaurant at Exeter College, where Ben, our apprentice chef, was taking part in the Apprentice-Takeover evening. We're in Bilbao in the Pais Vasco, which can only mean one thing... Pintxos!
A classic "Gilda" is a skewer with olives, pickled guindilla chillis and anchovies. This morsel was named after the 1946 Rita Hayworth film of the same name. But this being the Basque Country, they come in a multitude of delicious variations - and we managed to find a bar serving nothing else!
We happened across the old Ortiz anchovy-packing house on the quayside in San Vicente de la Barquera (Cantabria) - hasn't been used for some years - but a brand and business that still means the very best quality - and used by us in the restaurant. An impromptu lunch of razorclams, rabas and salad, followed by a long beach walk - note to self - make sure we return with surfboards in the future - great waves!
Another day, another long lunch... We're in Oviedo, the capital of Asturias (northern Spain), so it has to be 'fabada', followed by sizzling chuletón steak. Much discussion about whether the fabada was as good as Giselle's (we decided it was a close 2nd). Washed down with gallons of still cider. Off trouser shopping tomorrow for a size bigger...
The influences of the Romans and Moors are just as present in the gastronomy of Castile as elsewhere in Spain. How could we pass through Segovia without sitting down to 'Cochinillo' roast suckling pig - with paper-thin crackling, roasted in a wood-fired oven by the 'maestro asadores' at @restauranteelbernadino, followed by Ponche Segoviano, a marzipan-covered cream and sponge confection, as light as can be. It was a relatively short lunch of about 3 hours... 🙄
Exploring the streets of Segovia got us thinking about what is "Spanish"? The doorways we pass seem to hold a bit of the answer - Phoenician, Roman, Jewish, Moorish, Mudejar, Castillian... a rich melting pot that is so much on display in many many parts of Spain. Even English perhaps after we discover Eleanor of England (daughter of Henry II) married Alfonso VIII and became Queen of Castile here in the castle in Segovia. Who knew!?
Day 1 of our New Year's road trip through central and northern Spain kicked off with a breakfast of kings - tortilla sandwich, churros and choc - while visiting some old hang outs in the Guadarrama sierra. Catching up with some old friends before Reyes (epiphany) celebrations tomorrow in Escorial. It's great to be back exploring again ☺️

Today we spent the morning in the cavernous Atarazanas market, sampling some amazing produce, marvelling at the abundant seafood, beautiful wild fungi, and so much more. It has been such a pleasure spending time with the team outside of work. Tomorrow we go our separate ways. Chocolate babka and traditional Challah are two of our favourite breads - and the recipes in our Enriched Breads cookery class in our Autumn program of food experiences at Strawberry Tree. Both these breads are loaded with cultural symbolism (and chocolate!). In our class, you’ll also learn how to make Spanish “torrijas”, soaked in syrup – believe us, you’ll never look at stale bread the same way again – and take away your own finished breads at the end. Is there a better way to spend a Sunday morning?
